Wine Information

Physiologically ripe grapes were harvested from a selection of Saint Laurent vines on September 9, 2021. Semi-carbonic maceration took place for six months in kvevri, followed by four months of aging on the lees without intervention in 500-liter acacia wood barrels. Bottling took place without fining with 25 mg/L sulfites in March 2023. The pH is 3.2, and the residual sugar is 1 gram.

Colour

Cloudy, light ruby red.

Nose

Zillinger’s NUMEN Rosé is a delicate, light red wine from vines over 100 years old. It offers aromas of dried violet blossoms, sour cherries and cherry stones, red berries, and stony minerality. Added to this are notes of bay leaves, some undergrowth, and a hint of Espelette pepper.

Palate

On the palate, the wine is charming and inviting, with silky tannins and an acidity that begs for another sip. What’s particularly pleasing is the blend of sweet berry fruit and tart, slightly earthy notes. This is a lively, yet delicate wine with a long finish, one with great inner harmony.
