Wine Information

The vineyard has been in transition to organic viticulture since 2018. This process was completed in 2021. 100% Savagnin grapes were hand-harvested and fermented spontaneously in both oak barrels and temperature-controlled stainless steel fermenters. Aging took place in used oak barrels in the cellar, where the Vin Jaune is also aged. The barrels were not refilled, so a layer of flor formed on the wine.

Nose

The 2018 Savagnin Vin de Voile couldn’t really come from anywhere else but the Jura. The oxidative aging creates tension in the nose, with notes of lemon zest and ginger, green walnuts, green apples, a touch of peat, salted lemons, and hints of aged Comté.

Palate

On the palate, the Vin de Voile exudes a deep energy and electrifying freshness. The wine is fresh and clear, punchy, and thanks to the grape variety, simultaneously powerful and full-bodied, slightly silky and dense. It is a crisp wine with nutty and earthy elements, an elegant texture, juicy citrus and tart notes, plenty of iodine and salt, with precision and complexity.
