Info
The Mataro vines, also known as Monastrell or Mouvedre, are located in the amphitheater of Alta Alella. They grow on sandy, granite-rich soils in a Mediterranean environment, with direct views of the nearby Mediterranean Sea at an altitude of 150-300 meters. The vines are ripened on the vine. They are harvested shortly before the drying phase. Manual selection and destemming follow a maceration for six months in steel tanks. Initially, the pomace cap is poured over daily, then weekly. Gently pressed, the wine matures for a further two months in French oak.

Nose
At first glance, Dolc Mataro evokes strong associations with the pre-Christmas season. Magenbrot, speculatius (spiced biscuits), and mulled wine spring to mind. A bit of toasted sourdough bread, fruit bread, and even gingerbread complement this sensual moment very well. If we break these thoughts down, we’re left with winter spices like cinnamon, speculatius (spiced biscuits), and star anise, as well as dried fruits in the form of raisins, dates, figs, and prunes. A hint of ginger, spicy-sweet honey, and roasted chestnuts round it all off very well. If you give it more time and concentration, it reveals a veritable cornucopia of aromas and spices. Juniper, cardamom, and black pepper add dark accents. The density of fruit at its core inevitably reminds me of plum jam. Elderberry, blackberry, and sweet cherry are also present. Undergrowth and a hint of roasted nuts finally provide the final chord.
Palate
On the palate, it absolutely fulfills all expectations. The fruit is not only defined by its richness and concentration, but also clings to the palate with its spice and variety. It is built on a cool base that lends it stability. A hint of acidity accentuates the fruity sweetness. Above all, however, it is easy to drink. Dense, compact, textured like a fine honey on the palate, yet still imbued with finesse.
