Cava Recaredo is built on a long tradition. Founder Josep Mata began producing the first Cavas in 1924. The winery takes its name from his father, Recaredo Mata. Even today, the winery follows the same process in many of its founders’ production steps. All bottles are ridden by hand. Disgorging is also done gently by hand, without icing the bottle neck. For bottle fermentation, Recaredo uses natural corks instead of crown caps or plastic. All Cavas are bottled without dosage and are Brut Nature. The vineyards are located in Alta Penedès, the higher part of the wine-growing region. Biodynamic practices have been added in recent years. The result is absolutely top-quality Cavas that are second to none.

The current release from their flagship single vineyard is the 2010 Turó d’en Mota, from the vineyard that names the wine, planted in 1940, 0.97 hectares on limestone-rich soils. They picked 3,742 kilograms of grapes on September 7th, which represents a yield of 21 hectoliters per hectare. It fermented in 300-liter oak barrels with weekly bâtonnage for six weeks and was put to referment in bottle with neutral yeasts where the wine matured with the lees under a cork stopper for at least 12 years. 2010 was an unusual year with abundant rain in autumn and spring and a warm summer that brought ripe grapes with full development of aromas and flavors. The wine is super balanced, subtle and elegant, with insinuating aromas of great complexity mixing flowers and herbs; it’s balsamic, almost minty, with freshness, smoky and toasted notes, bakery aromas and high-pitched notes of cloves. It has a velvety, seamless palate with very small, integrated bubbles and a very long, clean and tasty finish. In October 2023, I tasted all 25 vintages produced, and this was one of my favorite years. 2,581 numbered bottles produced. It has 12% alcohol, with a pH of 3.23 and 5.4 grams of acidity. It was disgorged in November 2023. This was my favorite from all the vintages between 2023 and 2010, the “unreleased ones,” at a tasting of all 25 vintages from Turó d’en Mota back in October 2023. And in April 2024, it didn’t disappoint me either.

Turó d’en Mota is a single-vineyard Corpinnat sourced from a tiny plot planted in 1940 in the Alt Penedès. The wine was aged for five months in oak barrels before being re-fermented and kept on the lees for 150 months. Disgorged in 2023, this golden-hued Corpinnat offers tertiary aromas of brioche, pastry and vermouth, along with delicate nutty and lime notes. Dry, taut and foamy, the pure, fine mousse soars over the tongue, leaving a trail of nuances. Precise and persistent, this is a seriously joyful take on Corpinnat.
