A quote from the label (typical of Martin Nittnau). Subversion. And the beauty of this subversion. Storming the castle. Freeing the native varieties and sending them on an adventure, almost like going to Manila. They’ll come back. Very dry spring, no winter moisture, virtually no rain until June. Hot July and August, weak growth, and delayed ripening due to the drought, harvesting began at the end of August. Small berries give the wines more concentration. Manila White is a wild tangle of 55% Grüner Veltliner, 23% Welschriesling, and 22% Weißburgunder. The Grüner Veltliner is stomped with feet and whole grapes are mashed. After five days on the skins in stainless steel tanks, it is then pressed. The Welschriesling is completely destemmed and ferments exclusively in stainless steel tanks. The Weißburgunder is also completely destemmed and ferments in 1500l wooden foudres. The cuvée then ferments and matures in steel tanks until bottling and any fining or filtration. At a slim 11.5% ABV, it is a very contemporary drink.

Nose
The nose is wild yet harmonious. Kaffir lime leaves, generous zest, and bergamot flow wonderfully intensely from the glass. Ripe pear and a touch of quince compote. The skin of yellow apples brings freshness and a tart spiciness to the table. Nettle and wild herbs provide a certain ethereal spiciness, supported by marjoram and tarragon. Mirabelle plum and peach appear with a touch of temperature. Artichoke and fennel then slowly make their presence felt, ultimately dominating the wine with their vegetal yet very inviting character.
Palate
The first sip immediately reveals its tremendous balance. It appears lean and taut. The fruit finds its place at the core, but is kept within tight boundaries. Manila 2022 succeeds in channeling its wild character in a way that is extremely suitable for everyday use. A dark, balsamic spiciness clearly characterizes the finish, but in no way disrupts the flow. It is uncomplicated yet appealing on the palate.
