Wine Information
The Grüner Veltliner comes from the Steiner Schreck vineyard. The site is very steep, with vines planted on small terraces around four to five meters deep, characterized by Gföller gneiss and granite. The vines (the roots, not the vines) are around 100 years old and are cultivated according to Demeter certification. They have a 2.4 meter high canopy. The site is located at an altitude of around 320 meters above sea level. The harvest took place on September 9, 2020; the grapes were physiologically ripe, and Markus Lang picked them at a pH of 3.0. This early harvest resulted in an alcohol content of just 10.5% vol. The Grüner Veltliner was pressed extremely slowly over two days on the self-designed 100-ton tree press. The pressing process itself is completely reductive, but after that the juice is given time to brown, meaning it is deliberately exposed to oxidation. The juice was fermented spontaneously, aged on the full lees in large wooden barrels for over two years, and bottled unfiltered in November 2022. During fermentation, Lang added 5 to 6% of stemless berries, which ferment intercellularly (as in carbonic maceration), thus continually re-stimulating the fermentation process despite the constant 9°C in the cellar. Later, the wine was minimally sulfurized in tiny doses over several days.

The Third Act is now the only Grüner Veltliner still aged entirely in large wooden barrels. That’s how it should stay, and you can feel it directly. The aromas shift in favor of somewhat warmer and more exotic notes such as young pineapple, slightly yellow-fleshed fruit, and more yeast and lanolin. Yet the Third Act remains a bright, clear, slightly herbal, and citrusy wine.
Palate
On the palate, the Third Act also differs quite clearly from Fuchs und Dachs and Kalt und Klar, perhaps even more so than before. The aging in wood not only alters the slightly exotic aromas, but also the acid structure, which, while still building up a clear punch, appears silkier than in the other two Grüner Veltliners. There’s also a bit more tannin on the palate. Mouth-filling with plenty of salt, the Third Act has a hedonistic feel. It, too, is a bright and clear wine with plenty of citrus notes, including the aforementioned green pineapple. There’s a very successful balance of acidity, minerality, tannin, and a charming, creamy texture, just like the Third Act offers. It’s still very young, highly complex, and deserves to be aged a bit longer.
