Information about the wine
The Grüner Veltliner comes from the Steiner Schreck vineyard. The site is very steep, with vines planted on small terraces around four to five meters deep, characterized by Gföller gneiss and granite. The vines (the roots, not the vines) are 100 years old and are cultivated according to Demeter certification. They have a 2.4 meter high canopy. The site is located at an altitude of around 320 meters above sea level. The harvest took place on September 6, 2019, around 65 days after flowering, making it earlier than ever before. However, the grapes were physiologically ripe, and Markus Lang harvested them at a pH of 3.0. This early harvest resulted in an alcohol content of only 11.5% vol. The Grüner Veltliner was pressed extremely slowly over two days on a 100-ton tree press designed by the winemaker. The pressing process itself is completely reductive, but after that the juice is given time to brown, meaning it is deliberately exposed to oxidation. The juice was fermented spontaneously and aged on the full lees for two years in a large 1,000-liter wooden barrel. The wine was bottled unfiltered in March 2022. During fermentation, Lang added 3 to 5% destemmed grapes, which ferment intercellularly (as in carbonic maceration), thus continually re-stimulating the fermentation process despite the constant 9°C in the cellar. Later, the wine was minimally sulfurized.

Nose
While the Kalt und Klar Grüner Veltliner is more expressive with younger wood, Dritte Akt is an initially shy representative, but with plenty of time and air, it develops into a fully-grown magnificent specimen. After exposure to air, the wine becomes increasingly vibrant, powerful, bright, and clear with plenty of citrusy juiciness, some white and yellow-fleshed fruit, herbs, rock, and subtle wood and lanolin.
Palate
The Grüner Veltliner coats the palate with a noble velvety texture and a very light tannin. The Third Act is mouth-filling, hedonistic, bright, and clear with pleasant punch and a very slightly oxidative and yeasty note. It offers more acidity than the Cold and Clear, but this only becomes apparent after the second sip. The acidity seems ripe, but subliminally reveals a deep minerality. The handbrake is still on here. You can already sense the full dimension of complexity, but not quite grasp it. In this respect, one should be able to understand the comparison here, too: Cold and Clear is more reminiscent of a Genevrières, while the Third Act is more reminiscent of a Perrières. Definitely a highly exciting wine, with a very salty, creamy and sensual finish and a distinct elegance.
