Wine Information

This sparkling wine, made according to the Metodo Classico method, is a single-varietal Pinot Noir. The vineyards from which the wine originates are primarily located with southwest exposure at 360 to 430 meters above sea level, with yellow to deep dark clay soils and white active limestone. After pressing, the grapes were fermented spontaneously in used oak barrels and aged there for seven months. The Pinot Noir blend took place on March 30, 2018. The sparkling wine then rested on the lees for 59 months. Disgorging was done “pas operé,” meaning exclusively with the wine’s own wine from the same batch, without the addition of any dosage or anything else. No cold stabilization, filtration, or fining took place. Disgorged on March 13, 2023.

Deep golden yellow with a fine mousse.

Nose

The Blanc de Noir Pas Operé offers a deep, elegant, even noble aroma of a mature Pinot Noir sparkling wine, deliberately aged with the finest oxidation. It is reminiscent of the crust of sourdough bread, dried grapefruit peel, soft apricots, and red berries, along with a hint of fino sherry and nuts.

Palate

On the palate, this eight-year-old Blanc de Noir possesses impressive depth, elegance, and finesse, complemented by freshness, a clear, ripe acidity, and deep minerality and spice. Here, too, you’ll find clear notes of sourdough, fino, nuts, nutshells, and ripe cider apples and poiré pears. Added to this are tart, fresh notes of grapefruit and bitter orange. The sparkling wine has excellent length and, thanks to the extended lees aging, a fine yet balanced perlage and density.
