Information about the Wine
The Recaredo winery in the Catalan Penedès sets standards with its traditional-method sparkling wines. They work biodynamically in the vineyard and artisanally in the cellar. Innovation and tradition go hand in hand. All their sparkling wines are aged with natural corks, all bottles are ridden by hand, and disgorgement is carried out using the traditional method, also by hand and without icing the bottle neck. The Serral del Vell 2017 comes from a vineyard of the same name with a high limestone content. The Brut Nature is made from the indigenous grape varieties Xarel.lo (87%) and Macabeo (13%). The base wine matured for one year in a combination of steel tanks and wooden barrels. The tirage was made with fresh, concentrated grape juice from the same vineyard, as part of Recaredo’s philosophy is to capture the terroir in the bottle as authentically as possible. After 50 months of ageing on the lees, the sparkling wine was disgorged in April 2022.

Nose
The nose is very mineral, as is always the case with Serral del Vell. In the background, bright fruit such as pear, herbs such as thyme, and yeast notes such as toast emerge. The bouquet is crystal clear, fine, and wonderfully balanced. It offers pure elegance.
Palate
The palate, as in the nose, also reveals a stony minerality. The Serral del Vell 2017 also has a super-elegant perlage that is very fine and by no means overpowering. The Recaredo winery never aims for the mouthfeel to be dominated by the perlage. For them, the perlage never takes precedence over the wine; at most, it underlines it. The texture is silky and complex; the wine is unfussy, direct, and very precise. It has energy and enormous depth. The three years of bottle aging since disgorging have given this sparkling wine even more refinement and elegance. And then there’s the tartness and saltiness on the long finish, which is incredibly stimulating.

All their wines are Brut Nature, and so is the 2017 Serral del Vell, a blend of 87% Xarel.lo and 13% Macabeo. For them, it was an earlier harvest but within the normal parameters. This is a single-vineyard wine from soils with a very high content of calcium carbonate (33% active limestone), which gives the wine a very lively palate with a clear salty twist. The first vintage of this wine was 2006 and was born with less Xarel.lo, but the percentage has grown over the years because it started with a more classical blend with close to 50% Macabeo. They look for the expression of the soil here, narrower and more direct, with more tension and with tons of elegance from the aging with the lees, very integrated and balanced, keeping the acidity. It developed an acute note of licorice with time in the glass. It was disgorged after 56 months sur lie, because demand outgrows supply. They have 47,000 bottles of this vintage, which should last them for two years, so the 2018 will have a longer aging in bottle when it’s released.
