Winery
Cyril Jeaunaux’s winery is a little off the beaten track in Champagne. The village of Talus Saint Prix is located halfway between Vertus (Côte des Blancs) and Sézanne (Côte de Sézanne) in the Vallée du Petit Morin, and even there, the commune, which only has 39 hectares, is somewhat detoured. This is important because the terroir on which Cyril cultivates his 5.7 hectares is very different from the chalk of the Côte des Blancs. It is not the chalk that dominates here, but white marl, limestone, and, above all, flint. This means that 70% of his vineyards are planted with Pinot Meunier. They have been farmed organically since 2005, he has used biodynamic methods since 2010, and the vineyards have been officially in conversion since 2015. Cyril presses the grapes using two of his own Conquard presses and ages the wines in stainless steel and old wooden barrels, although malolactic fermentation is not deliberately induced.
Wine
80% Chardonnay and 20% Pinot Noir from vines that are around 60 years old. The soil contains clay, limestone, chalk, and plenty of flint. The champagne is based on the 2013 vintage (70%) and the 2012 vintage (30%). The wine was aged in stainless steel and wood, aged sur lattes for 3.5 years, and the dosage is 6 grams.

Nose
The Fil de Brume Brut by Cyriel Jeaunaux opens with fine notes of yeast and brioche. One involuntarily thinks of a Parisian patisserie where mainly tarts with lemon and stone fruit are baked. In the background, there is a hint of lime and chalk dust, covered with meadow blossoms. The champagne is fragrant, lively, and elegant.
Palate
On the palate, the Fil de Brume, which in French means something like wisps of mist that often drift through the small valley in the morning, initially reveals itself to be noticeably crisper and with more punch than the brioche nose would have suggested. This is wonderful; because alongside its almost fleshy character, the champagne is fresh, bright, and clear, displaying a light spiciness and an interplay of ripe fruit and a pleasant bitter note that seems almost tonic. The winemaker aimed for rondeur and gourmandise, and this is exactly what he achieved excellently.
