Product description for Jean Servagnat Les Galipes de Coulommes, Premier Cru Extra Brut 2019 Not far from Gueux and Vrigny lies Coulommes-la-Montagne in the so-called Petite Montagne de Reims. The village is known for its Pinot Meunier, which accounts for 65% of the Premier Cru vineyards. Jean Servagnat produces two champagnes there, each with an area of approximately 3.5 hectares. Above the village, in the northwest, the vineyards are arranged amphitheater-like and are dominated by Pinot Meunier. The grapes for the single-varietal Les Meuniers Insomis grow there on loamy, limestone soils. For his Les Galipes de Coulommes, he also uses Pinot Noir from the sandier plain and Chardonnay from Les Vignes Dieu, where Bonnet-Ponson also owns plots. From the outset, Jean Servagnat has relied on organic farming. In the cellar, fermentation takes place spontaneously, partly in stainless steel vats and partly in wood, and malolactic fermentation takes place. The champagnes are dosed with only minimal amounts, just enough to ensure they are in perfect sensory balance.
