Wine Information

100% Sauvignon from 45-year-old vines, farmed biodynamically on the small plot of Les Coûtes du Bout, where Caillottes, limestone from the Oxfordian period, and Kimmeridge limestone predominate. Entire vinification in wood with five months of maceration on the grapes, followed by soft pressing and a further six months of aging in the same barrels. Antoine Gouffier says: “We don’t make red wines at the estate, so we macerate for fun.”

Colour

Amazingly pale straw yellow for six months of maceration.

Nose

On the nose, this Vin de France is straightforward and fine, with significantly less green aromatics than the typical Sauvignon Blancs of this vintage. It smells of pomelo and ginger, apple and apple peel with a pleasant floral fragrance.

Palate

On the palate, this wine is a great pleasure. It is a clear vin de macération, yet by no means taxing. Only the extract, the notes of licorice, and a slight bitterness of the peel provide a weighty underpinning. The aging in this cool vintage has pleasantly rounded off the wine’s acidity. The caillottes ensured a dense mineral intensity, which also finds clear expression in the juiciness and fragrance.
