About the wine

100% Malbec with a yield of 25 hl/ha from micro-plots located at an altitude of 350 meters in a clos with siderolitic clay-limestone soils dating back to the Tertiary period, which have a high iron content. After hand-harvesting, the grapes were destemmed, fermented spontaneously, then gently extracted, macerated for a long time, and sulfur-free vinification. Aging took place in cellar amphorae for 12 months. No clarification or filtration. The final sulfur addition results in a total sulfur content of 12 mg/l.

Color

Deep garnet red

Nose

A Malbec that has been destemmed yet still smells of stalks and stems. A cool companion with notes of crisp red and blue berries, a touch of sour cherry, black olives, fir needles, wood and earth, a touch of tobacco, tar, and ink. Complex, agile, and yet restrained.

Palate

Emmanuel Rybinski aged this Malbec, called K-2, in an amphora, which creates a very unique structure and, above all, texture. The dark, juicy fruit seems embedded in a fine mist of rock dust. The Malbec is lean, fresh, easy-drinking, lively, young, and unconstrained. At the same time, a pleasant depth and complexity emerge in the K-2 in a completely unconventional and uncomplicated way.
