Product description for Celler Credo Mirabelles 2019 (bio)
Anyone who pays such close attention to their terroir, analyzing and nurturing it as sparkling wine producer Recaredo does, will eventually develop the desire to produce still wines from the interplay of the best soils and native grape varieties, biodynamic farming, and manual processing. To this end, the family founded Celler Credo in the mid-1990s, whose logo features the meadowfoam found in the vineyards. There are now around eight hectares of vineyards, reserved primarily for Xarel·lo and a small amount for Macabeu. The vines are planted on clay, limestone, and gravel soils; the grapes are always fermented spontaneously, often with extended maceration times, sometimes even producing an orange-like wine. Sometimes they are also made as Pét Nats, and always with minimal additions of sulphur or without sulfites altogether. “Xarel·lo is our credo,” is the winery’s motto.

The 2019 Mirabelles was produced with the scarce and characterful Malvasía de Sitges, a grape that was almost lost, from the Mediterranean (Greece) but adapted to Penedès where it delivers very different wines—savory, almost salty wines for food that are as far removed as the weed wines often produced with the grape. This was regrafted on Chardonnay vines. It fermented and matured in red clay amphorae. It has a deep golden color and an expressive and forward nose with citrus notes, yellow fruit and flowers. It’s aromatic but without excess and has high acidity; it has 10.5% alcohol, a pH of 3.21 and 5.2 grams of acidity. It’s medium-bodied with a dry and tasty finish. 3,300 bottles produced. It was bottled in June 2020.

Sourced from Can Rossell de la Serra in Penedès, the 2019 Mirabelles is 100% Malvasía de Sitges that underwent 48 hours of skin contact during fermentation. Yellow in hue, it features an herbal and citrus-driven nose with green apple notes. Dry and refreshing, the skin contact lent a complex texture to the chalky palate, leaving behind a pleasantly drying mouthfeel and a saline finish.
