Hand-harvested in 15 kg crates, selection and complete destemming of the grapes, spontaneous fermentation in clay vessels, partial maceration in 380 l clay vessels (Latin: doliola), spontaneous malolactic fermentation and filtration.

Colour

Intense amber with orange reflections.

Nose

The aroma of the 2018 Sitta Doliola from Attis is powerful: ripe orange flesh meets orange zest, orange jam, malt candy, wild herbs in honey, such as rosemary, thyme, and eucalyptus. Notes of dried apple peel and dried apricots are complemented by oriental spices, clearly turmeric, followed by cinnamon and cloves. A sea of blossoms and grasses punctuates its path – a truly exciting opening.

Palate

Dry, distinctive, and grippy, it grips the tongue and, with its distinctive, meaty character, immediately awakens the desire to accompany intense, aromatic cuisine. Its opulent fruit blends excellently with a subtle bitterness and salty length, offering plenty of power combined with flow and finesse. There’s still room for improvement; it has excellent aging potential! Be sure to decant and enjoy from a large glass, not too cold.
