The Jobard family has a very long tradition of winemaking. They don’t know the exact date themselves, but early documents date the origins back to the 16th century. Rémi Jobard’s philosophy can be summed up in a few words: lots of work in the vineyard, as little intervention as possible in the cellar. The wines are consistently aged in wooden barrels, with the use of new barrels deliberately kept very moderate at only one-fifth. For several years now, Rémi has also been using Stockinger’s half-barrel (600 l). He is pleased to note that this allows the wines to remain lean and mineral, and that the barrels do not alter the character of the wine. Rémi wants complex wines with multi-layered aromas, not ones dominated by wood and vanilla notes. He deliberately avoids filtration. The wines gain their natural stability through long aging in barrels over two winters.
