Info
In the single vineyard Rascara, Xarel-lo vines planted in 1999 grow on very calcareous soils. With the goal of achieving maximum terroir connection, Ton Mata of Recaredo and his team have experimented with different methods. In this raw interpretation of the traditional method, the must begins to ferment in the vineyard and is then used as a starter. No additives, yeasts, sugar, etc. are added to the wines. No fining, filtration, or sulfur takes place. The time on the lees and carbon dioxide provide sufficient protection and stabilization during the minimum 2.5 years of aging. The base wine was fermented in 300-liter oak barrels. This vintage was filled for the second fermentation on October 1, 2018. The batch began disgorgement in February 2024, i.e., after at least 5 years and 4 months. With a lean 11% ABV and less than 0.5g/l of residual sugar, we are faced with a light-bodied wine.
Color
Bright golden yellow with light reflections and rapid perlage.
Nose
The aroma is expressive: grilled pineapple, ripe pear, bitter orange, and Cox’s orange dominate the nose. These are joined by tart apple notes and citrus, almost cider-like nuances. Everything seems enormously musty, almost freshly pressed – with aromas of pear skin, apple peel, and quince must – a mixture of juice, pulp, and delicate tannins.
Palate
Warm spicy notes unfold in the background: cinnamon and cardamom, dried herbs such as thyme, marjoram, and oregano. A hint of yeast and saltiness, as well as pecan nut. The fruit of the nose also reappears in its best form. It feels like wet stone and sea spray at the same time. This contributes enormously to the depth. The creamy base is reminiscent of butter brioche, embedded in the fine texture of a sparkling wine that offers both substance and lightness.
