Product description for Jérôme Galeyrand Gevrey-Chambertin “En Billard” AOP 2021

Wine Information

The Gevrey-Chambertin comes from the En Billard hamlet near the winery’s cellar. The vines were planted in 1983. Vineyard work is organic, partly biodynamic, and therefore very labour-intensive. The Pinot Noir, 70% destemmed, was fermented in tanks, and aged for 24 months in used 228-liter oak barrels containing up to 25% new oak. Jérôme used exclusively indigenous yeasts; there was no fining, no enzymes, and only light filtration (where necessary), as well as no or very small doses of SO2. Approximately 2,100 bottles were produced.

Colour

Fairly transparent carmine red

Nose

The Gevrey-Chambertin En Billard has a precise, transparent, and clear aroma, with notes of partly tart berries and partly lightly cooked berries, as well as a subtle use of the finest wood.

Palate

On the palate, the Gevrey-Chambertin is still very restrained. The wild berry fruit is only just hinted at, and the tannin is still somewhat unfinished. The acidity, on the other hand, is particularly present in the opening, while gradually fading into the background towards the finish. Spicy notes, such as licorice, become increasingly present.
