Information about the wine

The wine comes from the Montmains vineyard. Together with Fôrets and Butteaux, the vineyard forms a 1er Cru hill when driving from Chablis to Courgis. The vineyards are located on the right side of the road and the left bank of the Serein River. The name is derived from “Montméen,” which refers to a medium-sized mountain that is lower than the surrounding peaks. In the past, the vineyard was often prone to frost because it is not directly exposed to the sun, but today it more often shows off its cool side. Damien Bouchard considers Montmains to be the best vineyard in terms of the health of the vines planted in 1971. They run from top to bottom, in twelve long rows, just before Forêts. The soils are characterized by Kimmeridge limestone and clay. The grapes were harvested by hand. After the harvest, the grapes were pressed immediately and the must fermented. The Chablis was aged for 13 months, 60% in used demi-muids and 40% in stainless steel. After aging, it was lightly filtered and sulfurized.

Colour

Light golden yellow

Nose

The Chablis 1er Cru Montmains is initially a slightly smoky wine, but this reduction is quickly replaced by citrus notes, some green pineapple, star fruit, and rock. The 60% wood is barely noticeable on the nose. Instead, there is a floral scent typical of this site.

Palate

On the palate, however, the wood and the associated air exchange during aging, together with the aging on the lees, create a sensually silky texture. There are also fresh, bright fruit notes with citrus fruits and pears, a hint of wood and vanilla and also pure energy that culminates in an intense and taut finish.
