The Pinot Noir comes from the Premier Cru Les Lavières vineyard in Savigny-lès-Beaune. The municipality is located about three and a half kilometers northwest of Beaune and, with 383 hectares, boasts one of the most extensive vineyards in the region. The Premier Cru Les Lavières vineyard is located towards Pernand-Vergelesses. Domaine Chandon de Briailles owns 2.61 hectares at the heart of the 17.66-hectare vineyard, which is named after the lavés, flat limestone boulders that were formerly used as roof tiles in Burgundy. The vines are around 50 years old and planted in a south-southeast facing soil consisting of a mixture of sandstone, sand, and marl, with ferrous oolite in the upper part and reddish-brown, crumbly limestone in the lower part. Spontaneous fermentation took place in a wood-clad cuvée with a fairly high proportion of whole-bunch grapes. The wine was then transferred by gravity into barriques and tonneaux with a small proportion of new wood. This was followed by around 14 months of maturation without further movement or racking. Bottling took place with a minimal amount of sulfur, mostly directly from the barrel.

The 2017 Pinot Noir from the Les Lavières single vineyard in Savigny-lès-Beaune is round and full-bodied with notes of ripe, bruised wild berries, particularly sugared raspberries. The wine also offers a slightly lactic component as well as notes of damp forest floor and undergrowth. This is underscored by a subtle hint of rose petals, violets, and limestone.
Palate
On the palate, Les Lavières is as juicy as it is soft, slightly lactic, and characterized by the sugary wild berries that were also present in the nose. Added to this is a rather restrained acidity. The more air and time the Pinot Noir is given, the more powerful, juicy, fresh, and tannic it becomes. Compared to Aux Fournaux, it is a somewhat darker and more masculine wine. It only takes an hour (at this point) for the wine to reach its full potential, collect itself, and find balance. And then it’s already a lot of fun.

The 2017 Savigny-lès-Beaune 1er Cru Les Lavières exhibits aromas of juicy cherries, rose petal, currant leaf, rich soil and warm spices, followed by a medium to full-bodied, satiny and succulent palate, with melting tannins, juicy fruit and a sapid finish. The domaine’s old vines in this superbly situated premier cru have put in a very strong showing this year, and like the Savigny AOC, this was already in bottle when I tasted it.

The 2017 Savigny-lès-Beaune Les Lavières 1er Cru, already in bottle, has a vibrant, spicy, rose petal and violet bouquet that is even more intense than the Aux Fournaux. The chalk/limestone terroir really shows through here. The palate is medium-bodied with supple tannin. It does not quite have the charm and crystalline quality of the Aux Fournaux, but is more masculine and structured, with a lovely marine element tincturing the dark berry fruit toward the chalky finish. Excellent.
