Wine Information

This sparkling wine, made according to the Metodo Classico method, is a single-varietal Chardonnay. The vineyards from which the wine originates are primarily located with southwest exposure at 360 to 430 meters above sea level, with yellow to deep dark clay soils and white active limestone. After pressing, the grapes were fermented spontaneously in used oak barrels and aged there for seven months. The Chardonnay was blended in March 2019. The sparkling wine then rested on the lees for 46 months. Disgorging was done “pas operé,” meaning exclusively with the wine’s own wine from the same batch, without the addition of any dosage or anything else. No cold stabilization, filtration, or fining took place. Disgorged on January 12, 2023.

Color

Medium golden yellow with fine mousse.

Nose

The Pensiero Pas Operé is a Blanc de Blanc, evident from the nose. It smells of lemons in various forms, from juice and zest to lemon cream. There’s also a hint of vanilla, some coriander leaves and mint, along with graphite and rock, but also some warm aspects of wood, almonds, and ripe stone fruit.

Palate

On the palate, the Pensiero combines ripe autolysis notes with fresh citrus notes. These, together with the lively acidity and dry character, provide a pleasant boost thanks to the lack of dosage. Initially, notes of almond croissants, a touch of vanilla, coriander seeds, and cider apples, combined with a delicate creaminess, dominate. The mouthfeel then becomes increasingly chalky and piquant, with a tart citrus and salty predominance.
