Product description for I Vigneri di Salvo Foti Aurora Bianco Caselle DOC 2023

The grapes for Aurora grow in the Contrada Caselle in the municipality of Milo on the eastern flank of Mount Etna at 750 m above sea level. Declared Etna Bianco Superiore, it is made from 90% Carricante and 10% Minnella bianca. On Etna, the name Aurora refers to the small, graceful butterfly, which is also depicted on the label (and is threatened with extinction). Therefore, all work in the vineyard is carried out exclusively by hand and using natural preparations. The wine is moved and bottled using gravity according to the phases of the moon. The vineyard was planted with chestnut stakes in 2010 and 2015 at a density of 7800 vines/ha in Albarello. Harvested in the second half of October, the grapes are pressed directly and then left to settle for around 30 hours. Fermentation takes place spontaneously using a pied de cuve in stainless steel. Average annual production is approximately 10,000 bottles.

Color

Intense lemon yellow with a silvery rim.

Nose

Noblesse oblige seems to be the motto of the 2023 Aurora from I Vigneri di Salvo Foti: With delicate restraint, it initially appears silent, then hesitantly reveals delicate citrus notes of lemon blossom and green mandarin. Distinct saline notes are reminiscent of a warm sea breeze, along with some Mediterranean maquis and a distinctive note of chamomile tea and beeswax. A wine that benefits incredibly from timely aeration—even over several days, if that’s possible.

Palate

The citrus notes of lemon oil and the subtle, salty minerality blend on the palate to create a delicate, creamy blend. The delicate extract sweetness is reminiscent of wild fennel pollen, complemented by tart notes of wild sage and chervil, and a subtle, smoky top note. With a raised vibration on the palate, it plunges into the throat without any noticeable resistance. With its delicate extract and saline nature, it stretches far across the palate and makes you shout with joy that it’s only 11.5% ABV – for a no-remorse refill!
