Info

Foam white is based on Pinot Gris from the unpruned Graupert vineyard. The vineyard is left to its natural state. After the harvest at the end of September, the process begins with a five-day maceration. The mash is then pressed and bottled with 20g/l of residual sugar and fermenting without additives. Fermentation comes to a natural end in the bottle. After seven months on the lees, it is then disgorged by hand.

Colour

Slightly cloudy orange-red with light and brown reflections, intense mousse.

Nose

The nose is spicy, hovering somewhere between orange zest and rosehip tea. Cinnamon, juniper, and white pepper join in. Abundant wild garden herbs lend it freshness. Browning apples, pear compote, and caramelized quince give it a clear stone fruit note with a local touch. Marzipan and baked apple evoke classic preparations of these fruits. It retains its intense nuances of orange zest. Rooibos tea and plenty of rosehip, however, dominate the nose.

Palate

The carbon dioxide initially froths up considerably. This gives it fullness, density, and meltingness. The fruit now comes across even more tangy than on the nose. However, the aromas largely coincide. It shows plenty of tannin, making it appear angular and masculine. The resulting rustic character suits it wonderfully. The acidity then cuts through the fruit and tannin with a single blow. It retains its phenolic structure, while the aromas of the tea and orange pick up speed again in the finish.
