Nose

The nose exudes a certain wildness, true to its name and label. Lemon zest and lemon tart are dominant. Some shortcrust pastry and dark toasted bread rise to the surface. It exudes an ethereal charm. Fennel seeds, freshly shaved fennel, roasted coriander seeds, and a hint of aniseed become increasingly prominent. Ripe pear and some candied quince round it out.

Palate
