The cool winds and nights on Mont Ventoux are a trump card for this wine. The cuvée consists of Grenache Blanc, Clairette, and Bourboulenc. Winemaker Philippe Gimel draws comparisons to the best white wines of southern France and is convinced of the longevity of his wine. The harvest was at 20 hl/ha. The entire aging takes place in stainless steel tanks.
Colour
Brilliant lemon yellow with light reflections
Nose
A very multifaceted and exciting nose flows from the glass. Almond and apple blossom provide a fine, floral elegance. Almonds are also present freshly sliced and in roasted form as a puree. Dried wildflowers, hay, and plenty of herbs build up alongside them. Tarragon, sage, and thyme are convincing alongside plenty of dried lavender. Fruit plays a subordinate role, if at all. A hint of quince, khaki, and grapefruit. Dried fruits such as dates, apricots, and mango are much more evident. It displays a warm and inviting core. At the same time, however, the coolness of its origins also comes through here.
Palate
Philipp Gimel brings precisely this diversity to the bottle and thus to the glass. Surface would be advisable here to provide the wine with the necessary oxygen. It appears compact and very tightly constructed. It benefits from a restrained but extremely essential acid structure. A fine tannin framework carries it forward. All other elements can continually attach themselves to it on the way to its goal. Its sublime nature radiates grandeur, tranquility, and elegance. The existing maturity is surely only a first step, and it still has many years of development ahead of it. The aromas reappear in a similar composition to the nose. The dried fruits, in particular, characterize the finish alongside the Mediterranean herbs.
