Product description for Waris-Larmandier Haute Volée, 1er Cru Blanc de Noirs, Extra Brut NV
The Champagne house was founded in Avize in 1989, but really gained momentum in 2009. It is the home of the Waris and Larmandier families, who have been producing Champagne for five generations. The majority of the vineyards are located in five Grand Cru vineyards in the Côte des Blancs, but there are also smaller portions in the Montagne de Reims and on the Côte des Bar. Since Jean-Philippe Waris joined the winery as the eldest son in 2009, the house has been certified according to Demeter standards. His focus is on old vines and on aging the base wines as perfectly as possible, which is why he ages his wines at only 4.5 bar instead of the usual 6 bar. The entry-level Champagne, Racines de Trois, is a blend of several grape varieties; the other white Champagnes are Grands Crus from the Côtes des Blancs.
