Wine Information

This wine is a late-fill Sauvignon Blanc from the Wielitschberg, Grassnitzberg, and Ottenberg vineyards in Ehrenhausen, with clay-marl and shell limestone soils. It combines the style of Southern Styria with that of the Tement winery, as well as 36 months of Sauvignon Blanc aging on the fine lees in 900-liter, 1,200-liter, and 2,400-liter barrels. Following a brief maceration period, the wine underwent spontaneous fermentation in the press.

Colour

Medium straw yellow with light green reflections and a very light mousse.

Nose

The aroma of the “Zeitspiel 3” Sauvignon Blanc offers an interplay of green notes of grass, gooseberries, a touch of lime peel, and mint, along with a hint of pepper, graphite, and green tobacco, green olives, and moist lichens on rock.

Palate

On the palate, this is an extremely fresh, juicy wine that’s mouthwatering from the very first moment. Three years is nothing here. The freshness is already noticeable when the glass cap escapes with a rich “poof” and you see the carbon dioxide in the glass. It continues like this: cool, minty, slightly ethereal with green, but by no means unripe, notes. The Sauvignon Blanc appears white-fleshed, gently creamy, with clear, yet silky acidity, a hint of salt, and intensity in the long finish.
