Product description for Sottimano Pajoré, Barbaresco DOCG 2021
Christoph Raffelt 14.2.2023: The Nebbiolo comes from the Pajoré vineyard in Treiso. Pajoré is located north of the city. Here, 75-year-old vines are densely planted in a southwest-facing position. Sottimano has been farming this vineyard organically since the 1970s. The grapes were destemmed and fermented for up to 60 days, or left on the skins, with the pomace cap being regularly punched down during fermentation in open stainless steel fermentation racks. Since 2020, the wine has been aged in large, slightly conical botti. The barrel aging period was around 24 months.
Colour
Dark, shimmering cherry red with a dense core and light rim.
Nose
The 2021 Barbaresco from the Pajoré vineyard thrives on a mixture of floral and spicy accents. Pansies and violets alongside a hint of lilac characterize it. Its dark fruit is still somewhat veiled by the floral notes and its spice. Behind them, I can detect pickled morello cherry, raspberry, elderberry, a touch of sweet cherry, and even a hint of sloe. Liquorice and hints of dark chocolate complement this fruit very skillfully. Kaffir lime leaves, dried bay leaves, and oregano lend it a good amount of spice paired with ethereal freshness. A touch of juniper and black pepper round it off.
Palate
It builds powerfully and charmingly on the palate. At the same time, it is incredibly juicy and stimulating. A fine, precise acid structure clearly marks its place within this structure. This juicy, nonchalant character appears youthful, generous, and carefree. This exudes a very refreshing style and a contemporary interpretation of its origins. The tannin is very restrained, allowing its silky texture to come into its own. The importance of this fine tannin, which maintains the wine’s high level of strength, must be emphasized. In combination with its fine mineral side, this comes to the fore. Its dark floral side characterizes the finish for minutes, with the various herbs also lingering.
