Marjorie and Stéphane Gallet met at the agricultural college in Perpignan, but initially went their separate ways. It was their shared passion for horses and later for wine that brought them back together. At the time, Stéphane worked on a larger farm in Maury, while Marjorie gained her first practical experience in biodynamics in Calce near Gauby. In 2003, she borrowed money from friends and started her own business. The property was actually called Roc Blanc, named after a white quartz vein protruding from the black slate. However, Marjorie decided to rename it Roc des Anges, or Angel Rock. The winery is now one of the region’s top addresses and comprises 30 hectares of vines on a mosaic of diverse soils. The Iglesia Vella (translated: old church) was planted in 1954 on pure slate, consists of 100% Grenache Gris, and is the white counterpart to the red Las Trabasseres. The slate soils give the wines their profound minerality and the distinctive saline perception in the long finish, which is why Marjorie and Stéphane always refer to this wine as their “rock wine.”

Nose
The 2020 Iglesia Vella presents itself on the nose with noble restraint; large glasses make it seem a little more talkative after a while. Then, with a firm voice, it tells of wet stones, red apple skin, and white blossoms. Reduced like a southern French still life, everything is in its right place; a bouquet of dried herbs along with some mussel shells and lemon leaves complete the picture.
Palate
With mouthwateringly salty minerality, the Iglesia Vella is both challenging and exhilarating. Sparse and sinewy, it’s reminiscent of a greyhound, and its rapid tug certainly lends a tailwind to this analogy. Ground rock flour with the calibration of the finest sandpaper lends it its stimulating texture, further fueled by noble phenolics. The acidity is beautifully integrated and carries it into a saline, ethereally cool finish.
