Les Voranes 2019 is actually only the second vintage from the small side project called Bufadors by Ton Mata, whose family is known for Recaredo. Les Voranes means the Vienna Mountain, which is located very close to the cellar. 8,028 bottles were produced from the two vineyards in Can Rossell de la Serra and Torrelavit. Xarel-lo and Macabeu grow there on calcareous soils with clay in the upper layer. The Macabeu was harvested by hand on August 22, 2019, and subjected to two days of maceration. The Xarel-lo was harvested on September 2 and 14, 2019, also by hand. The portion of the grapes for the fermentation starter was then harvested on October 1, 2019, and added as tirage on October 8, 2019. The first disgorgement of this batch took place on June 29, 2022. Like all Recaredo wines, Les Voranes is vinified as a Brut Nature. A special interpretation of the traditional method is used for this, which is intended to place an even greater focus on the terroir. A pre-fermentation begins in the vineyard, which is then added to the bottles for a secondary fermentation in the winery. Apart from this pre-fermenting must, nothing else is added to the wine. Aging on the lees is a fundamental element at Recaredo. At Bufadors, the wines are made entirely without sulphur and age on the lees for at least 2.5 years. Analytically, it has an alcohol content of 10.5% vol., just 0.27g/l of residual sugar and 5.4g/l of acidity.
Colour
Pale lemon yellow with light reflections. The perlage is rather coarse-grained.
Nose
A very wild and yeasty nose. The yeast cultures are clearly noticeable and reminiscent of fermenting sourdough. It displays plenty of green accents. Lemon balm, chervil, fennel, and lemon thyme are dominant. Wheatgrass, coriander, and lemongrass provide intense, unusual elements. Fennel and artichoke lend their vegetal character. Freshly chopped almonds are also typical of the region. Fruit also emerges as the wine progresses: white peach, lighter-coloured apple, and an unusual hint of lychee. The balance of herbs and fruit is very good. To me, it doesn’t strike me as terroir-oriented and consistent as usual with Recaredo. It seems more youthful, but also more relaxed and very linear. Simply a completely different interpretation.
Palate
On the palate, it is somewhat prominent and pleasing with a light mousse. The mousse builds continuously, appearing melting and creamy. The acidity then skillfully sets in and breaks it up. It is always timid and shy in its aromatic expression. Its bright fruit remains unobtrusive, yet highly accessible. It is characterized by a medium length and not overly demanding complexity.
