Quars is based on Grenache Blanc, which, as its name suggests, is found on quartz and clay. This gives the Grenache Blanc a fresh and linear structure. The 500 meters of altitude, with its extreme amplitude of day and night temperatures, ensure a certain degree of acidity and finesse. Vinification takes place in cement tanks. The subsequent aging for 10 months in used oak barrels (500l tonneau) ensures a melting character that also brings balance.

Nose

The nose of the 2021 Quars has a wonderfully distinctive, Mediterranean aroma. Puristic and pure, yet generous and inviting. White blossoms from almond and orange trees set a delicate rhythm. Freshly sliced almonds and tangerine skin provide clear Mediterranean aromas and a mix of bitter and sour. Delicate roasted aromas of cold smoke and cedarwood emerge. The fruit is typically timid. More dominant are the spices of juniper and white pepper, along with a touch of cinnamon. Tobacco leaves and unroasted coffee beans provide character and balsamic intensity. The fruit is subtly described with a touch of grapefruit and quince. Fennel and anise add their final touch.

Palate

This interplay continues seamlessly on the palate. Racy and lean, but never loses sight of its Mediterranean center and generous warmth. It shows edge and thrives on a linear, subtle profile. Beyond that, however, it reveals its charming, juicy side. Restrained in its acidity, but striking in its saltiness. Pleasant bitterness enlivens it in a very positive way. In the aftertaste it shows its nutty aromas wonderfully.
