Description
Champagne Petit Clergeot is located in the southern Aube, that is, on the Côte des Bar. Since 2017, Paul-Bastien Clergeot has been farming eight hectares of his family’s vineyards in Polisot, Les Riceys and Balnot sur Lagne. He has used no herbicides in the vineyards since then. The Polisot commune is known for its champagne from Piollot or Marie Courtin, Les Riceys of course for Olivier Horiot. The organic certification of Petit Clergeot took place with the 2020/2021 vintage. Clergeot produces Brut Nature champagne from one parcel, one grape vari-ety and one vintage. The basic wines are currently still aged in stainless steel, but Paul-Bastien is in the process of acquiring a larger stock of wooden barrels. He is also experimenting with stain-less steel in barrique size and shape. In addition to his champagne, he produces a red Côteaux Champenois, but in such small quantities that it is only enough for family, friends and a few sommeliers.
