Wine Information

Single-varietal Pinot Noir from the Côte des Bar. The winery is located in Polisot. Paul-Bastien Clergeot cultivates eight hectares in Polisot, Balnot-sur-Lagne, and Les Riceys. This wine comes from a Pinot Noir plot called Chevry, planted in 1975. It faces east and is located “bas de Coteau, au Bord de la Rivière.” The grapes were harvested on September 10, 2021, and aged in stainless steel (Cuvée Cuve). The V21 is the third vintage. It was disgorged on January 18, 2024. The dosage is 0 g/l.

Colour

Straw yellow with fine perlage.

Nose

The Chevry Cuvée Cuve V21 is a Pinot Noir champagne made from Kimmeridge limestone. It smells of red apple and red berries, combined with lemon zest and some stone fruit. There is also a waxy note on the nose, along with some limestone, jasmine, coriander, and yeast.

Palate

On the palate, the cuvée also appears rather reddish and waxy. With a subtle effervescence and a pleasant freshness, the aromas are dominated by stone fruit notes, including apple, a hint of quince, and some red berries.
