The Nikolaihof is the oldest winery in Austria, with a history dating back to 63 AD. After secularization at the end of the 19th century, the business passed into the hands of the Saahs family, and Nikolaus Saahs took over management in 2005. The Nikolaihof began operating according to biodynamic principles in 1971, which led to Demeter certification. Since then, nettle manure, valerian drops, horsetail tea, and specially prepared preparations have replaced herbicides, pesticides, or fungicides. The 2014 Nikolauswein is a cuvée of 70% Riesling, 20% Grüner Veltliner, and 10% variable proportions of other varieties. Aged for six years in small wooden barrels, it was bottled in April 2020. A proud 230 grams of residual sugar is accelerated by 9 grams of acidity.

Nose
The 2014 St. Nicholas wine from Nikolaihof is almost explosive on the nose: a kaleidoscope of aromas spreads out like a peacock’s wings, so that you spend a quarter of an hour sniffing before taking the first sip. The aromas range from dark orange to light brown and include fruits, candied fruits, and dried fruits, as well as spices, vegetal and spicy aromas. Garnished with the obligatory volatile acidity, it is characterized by the long aging in wood; the fresh fruits are captivated by dates and dried figs. Closely followed by candied orange peel and dried apple rings, a spoonful of acacia honey joins the action, while roasted chestnuts and candied almonds round out the orgy.
Palate
At a whopping 230 grams, this diabetic dystopia’s aroma reflects the nose almost exactly on the palate, with dark flavours predominating: nuts, chestnuts, and dates take on the spicy aspect, while chestnut and fir honey lead deep into the complex thicket of aromas. With a silky texture and a radiantly bright acidity beneath its selflessly lavish richness, its dark spiciness reveals itself delightfully exhilarating on the palate. The wood is skillfully used and supports the spicy aroma, which rewards the brave with unexpected combinations at the table.
