Wine Information

Les Herses is a 14-hectare site with Oxford limestone and clay soils in Sancerre. In Le Paradis, Planchon owns 0.9 hectares with a south-facing exposure. The vines are on average 55 years old, planted at a density of 7,700 vines per hectare, and yield around 45 hl/ha. After being hand-picked, the grapes are slowly pressed in a pneumatic press and left to settle for approximately 36 hours at a temperature below 10°C. Fermentation then occurs spontaneously, 70% in stainless steel tanks and 30% in 500-liter barrels. Aging on the fine lees takes place in the same tanks for a period that varies depending on the year. On average, this is ten to twelve months. Bottling then takes place according to the lunar cycle.

Nose

The 2019 Sancerre Le Paradis presents itself straight and clear, almost shyly reduced, bright and crystal-clear with notes of white flowers, limes and lemons, green apple, and herbs. With air, ripe fruit notes come to the fore, and the use of wood leaves a light imprint. Even with warmth, the Sancerre remains extremely precise.

Palate

The palate reveals the power and intensity of this very mineral, purist, powerful, and almost steely-cool Sancerre. Le Paradis appears pure, bright, and electrifying on the palate. At the same time, it has something touchingly sensual and silky due to the yeast ageing and the use of wood. In addition to the citrus fruit, there are salty notes, again some cassis, and also elderberry. The wine also has a beguiling depth and tension as well as a long, intense finish, deeply impressive for a maiden vintage!
