Wine Information

Les Binardes is a Côte-Rôtie made from 90% Syrah and 10% Viognier. The vines date from 1986 to 1994 and are planted on steep slopes on leucogneiss and quartz soils. The wines are produced according to Jules Chauvet’s principles after a cool 24-hour pre-fermentation with a cool carbonic maceration lasting ten days and then aged for twelve months in used barrels. The wine was not filtered or fined and only minimally sulfurized.

Colour

: Dark purple with violet reflections and a black core.

Nose

The nose of Les Binardes is characterized by dense, ripe fruit and spices. The Côte-Rôtie is reminiscent of juicy blackberries and black cherries, plums and sloes, but also of blood oranges and bergamot combined with mint, juniper and licorice, a touch of pepper and bresaola. Overlying notes are violets and lilacs.

Palate

On the palate, this Syrah is a dense, ripe, juicy, and almost creamy wine. It delivers plenty of extract sweetness and concentrated dark fruit, permeated by a brightness and freshness derived from, among other things, the Viognier. The dark, concentrated fruit combines with a slightly peppery spice and is framed by silky tannins. This wine should definitely be decanted now.
