Info
The grapes for this cuvée were harvested on September 20 and 26, 2014, and September 6, 2019. There was no maceration, and the yield from this gentle pressing is just 50 liters from 100 kg of grapes. For pre-clarification, the must was held for up to 48 hours for natural sedimentation. The base wine is then fermented in steel tanks at 18-22°C. The process lasts up to four weeks and is completed with malolactic fermentation. The base wine continues to mature in steel tanks on the full lees for seven months and a further nine months on the fine lees. On December 17, 2015, the second fermentation took place in bottles. Depending on the batch, the lees are aged for at least 90 months. Disgorgement at 0g/l dosage in May 2023.
Colour
Intense lemon yellow with golden and green reflections, very fine, active perlage, and a uniform, yet short-lasting mousse.
Nose
78 months on the lees are a word that speaks for itself and naturally leave their mark. Its yellow fruit appears soft and seems to be nestled on a warm cake base. Mirabelle and peach bases, as well as a hint of tarte tatin, are characteristic of this stage. Pineapple and mango gently swirl in the background. Warm brioche with plenty of salted butter immediately springs to mind. It is also permeated by plenty of fresh elements. Lime and lemon zest, sea spray, and oyster shell are at their best. Wet chalk and plenty of rock emerge on the nose.
Palate
On the first sip, it lives directly from its versatility. The fruit here, too, is warm and comforting. At the same time, the yeasty texture dominates the opening minutes with plenty of punch. This lingers for minutes. Its mineral side builds up in the background. Its cool elegance comes to the fore, and the mouthfeel is crisply mineral. It’s not opulent, but it thrives on complexity and length. Almond and hazelnut aromas leave their mark on the finish.
