Product description for Loimer Extra Brut Reserve NV (bio)Christoph Raffelt: The cool and tart notes are also present on the palate. Furthermore, the sparkling wine displays bite and unbridled freshness with a dry impression. This creates pressure on the palate, but with the fine mousse and the just-ripened fruit, it also creates impressive elegance and finesse. The sparkling wine remains taut until the long finish. It displays a slight saltiness and, once again, tart herbal notes. This is very successful and harmonious – especially if you allow the sparkling wine time in the glass to develop and become increasingly complex.
Information about the wine
The grapes for this sparkling wine come from the Kamptal and the Thermen region. Zweigelt, Pinot Noir, Chardonnay, Pinot Blanc, Pinot Gris, and Grüner Veltliner were used. The grapes were harvested by hand in 20 kg crates in early to mid-September 2015. After whole-bunch pressing, yielding 50 liters of juice from 100 kg of grapes, and a preliminary clarification of approximately 40 hours, the juice was spontaneously fermented at 18 to 22 °C for two to four weeks in steel tanks. It remained there on the fine lees for over six months. The cuvée was bottled in June 2016 and remained sur lattes until January 2018. The grapes were then riddled by hand. A dosage of 2 g/l was used, with approximately 20 mg/l SO2 added before bottling and 15 mg/l during disgorgement.
Colour
Light citrus yellow with an invitingly fine mousse.
Nose
The Reserve Extra Brut has an elegant and delicate aroma of yeast dumplings and a hint of brioche, of yellow and orange citrus fruits, and of white-fleshed stone fruit. This is accompanied by light, floral, and slightly tart herbal notes. The sparkling wine appears cool and taut, yet ripe and juicy.
Palate
