Wine Information

Biodynamic viticulture, 60-year-old vines grow at altitudes of 750 and 900 m. After hand-harvesting, the wine is fermented in large wooden barrels with wild yeasts and aged in French barriques and foudres. Bottling takes place without filtration or stabilization. The production quantity is 3,800 bottles.

Colour

Sparkling, slightly cloudy ruby red with violet reflections and lightening towards the rim.

Nose

The 2021 Sotorrondero displays pure dark berry fruit: cassis, blackberries, fragrant, sun-warmed wild raspberries, and blueberry muffins. After sufficient aeration, intense notes of rosemary, thyme, and wild sage emerge, underscored by rose and violet scents. A hint of cinnamon and juniper also emerge, as do delicate earthy aromas and a beguiling minerality that underscores its complex character and lends it freshness even on the nose.

Palate

It flows most beautifully slightly chilled over the tongue, revealing its wonderful fruity side with bravura. The refreshing acidity and invigorating, fine-grained tannin structure give it wings and leave the taster wanting more. On the palate, it possesses earthy depth and finesse at the same time. If possible, decant and serve slightly chilled.

The 2021 Sotorrondero from this vintage was produced exclusively with Garnacha from the village of El Real de San Vicente. It’s quite dark and has a medium to full-bodied palate with abundant tannins. It feels too young and in need of some more time in bottle. It has 14.5% alcohol and a pH of 3.45, and it feels a little ripe. It matured in used 500-liter barrels for 10 months, followed by a couple of months in concrete before it was bottled. 3,800 bottles were filled in February 2023.
