Wine Information

Biodynamically cultivated. The 70-year-old vines grow at an altitude of 900 meters on granitic and sandy soil. After hand-harvesting, the wine is fermented in steel tanks with wild yeasts and then aged for 20 months in French barriques and foudres. Bottling takes place without filtration or stabilization. Total production amounts to 1,200 bottles.

Colour

Dense and deep purple, almost colour-dense to the rim.

Nose

The nose of the 2021 Ataulfos captivates with its beautiful intensity: cassis, sweet blueberries, mocha, cinnamon, and cardamom. Dark, mystical, and inviting—enjoyable. In addition to the subtle sweetness, it displays plenty of roasted aromas and distinct notes of rosemary, juniper, and thyme.

Palate

The palate is saline, complex, and multi-layered; the youthful tannin structure and acidity are invigorating and challenging, with a long finish that indicates its excellent aging potential. Truly a profound and extremely exciting wine, perfect with hearty dishes with concentrated sauces. Be sure to decant and enjoy from a large glass.

I hadn’t tasted their top bottling from El Real de San Vicente for many years and was glad to see that the wine is back. The still very young and undeveloped 2021 Ataúlfos comes from the same 1.5-hectare plot of old vines in El Real de San Vicente (Toledo) planted at 830 meters in altitude on sandy granite soils. The full clusters fermented in open oak vats with indigenous yeasts and macerated for 60 days. The wine matured for six months in 500-liter oak barrels and another seven months in a 1,000-liter oak foudre. It’s floral and elegant, with good ripeness and development of aromas and flavors. It has 14.5% alcohol and very good freshness that makes it balanced and approachable, even this young. It should develop nicely in bottle. 1,200 bottles were filled in February 2023.
