Wine Information

Vinupetra: is a word from the Sicilian dialect and means “wine produced on a soil full of stones.” The vineyard is cultivated by hand and with natural products. No biotechnology is used in the winemaking process; racking and bottling are carried out according to the phases of the moon. All bottles are numbered and bear the number on the main label. Contrada: Porcaria in the municipality of Castiglione di Sicilia – Etna North at 580 m above sea level. Parcella: VignaCalderara. Grape varieties: 80% Nerello Mascalese, 10% Nerello Cappuccio, 10% Grenache.

Vine Information

Pressing of the grapes, 30% of which are with the stems. Maceration with the grapes for at least 15 days in wooden vats with native yeasts from Palmenti on Mount Etna. Alcoholic fermentation for 12 days. Aging for 12-18 months in 225 and 500 liter barrels and in the bottle for at least 1 year. Light filtration only at bottling, with very little sulphur added only at bottling.

Colour

Dense and muted black-red, almost colour-tight to the rim.

Nose

The 2018 Vinupetra Viti Centenaire Rosso from Salvo Foti flows oilily into the glass and impresses with an outstanding intensity of aroma. From pickled blackberries, cassis liqueur, and sweet black cherries to fine dark chocolate, coffee, smoked meat, grilled rosemary, violets, truffles, and licorice, this red wine offers everything you would call a brilliant performance, full of depth and plenty of minerality and expression.

Palate

Density and intensity are also what defines Salvo Foti’s masterpiece on the palate: smooth with plenty of sweet and beguiling fruit, herbal freshness, gripping power, and length. A wonderful long-distance runner that will continue to develop fantastically over the coming years and, even in its youthful stage, harmonizes perfectly with intense cuisine with concentrated sauces. A firework display like no other, from equally fiery Sicily! Please decant well in advance and serve slightly chilled.
