Information about the wine
The Grüner Veltliner comes from the Steiner Schreck vineyard. The site is very steep, with vines planted on small terraces around four to five meters deep, characterized by Gföller gneiss and granite. The vines (the roots, not the vines) are 100 years old and are cultivated according to Demeter standards. They have a 2.4 meter high canopy. The harvest took place on September 4, 2019. This early harvest resulted in an alcohol content of only 11.5% vol. The Grüner Veltliner was pressed extremely slowly over two days on a 100-ton tree press designed by the winery. The pressing process itself is completely reductive, but afterward the juice has time to brown, meaning it is deliberately exposed to oxidation. The juice fermented spontaneously and aged on the full lees for two years in 670cm oak barrels. After 30 months, the wine was bottled unfiltered in March 2022. During fermentation, Lang added 3 to 5% destemmed grapes, which ferment intercellularly (as in carbonic maceration), thus continually re-stimulating the fermentation process despite the constant 9°C in the cellar. Later, the wine was minimally sulfurized.

Nose
If time permits, Markus Lang’s wines should be left in the open bottle for at least as many hours as they spent months in the cellar. Then this Grüner Veltliner, for example, develops into a wine with a creamy, herbal aroma reminiscent of lemon curd and salted lemons, green plums and a touch of celery, pepper and gravel with petrichor, a touch of flint and blond tobacco. It appears cool, intense, and clearly structured.
Palate
On the palate, the Kalt und Klar appears generous and juicy, fresh, and tonic. It’s impressive how intense, powerful, and dense the wine is, even though it’s one of the lightest in terms of alcohol content. Yet nothing is lacking here. On the contrary, this is a charming, balanced wine: citrusy, bright, clear, with a hint of ripe pineapple, some wood, stone, and plenty of salt in the complex finish. If you don’t shy away from the comparison, then this is more of a Genevrières, while the Third Act is more reminiscent of a Perrières.
