Wine Information
The Grüner Veltliner is grown in the Steiner Schreck vineyard. The site is very steep, with vines growing on small terraces around four to five meters deep, characterized by Gföller gneiss and granite. The vines (the roots, not the vines) are 100 years old and are cultivated according to Demeter certification. They have a 2.4 meter high canopy. The vineyard is located at an altitude of around 320 meters above sea level. The harvest took place on August 22nd, around 65 days after flowering, making it earlier than ever before. However, the grapes were physiologically ripe, and Markus Lang picked them at a pH of 3.0. This early harvest resulted in an alcohol content of only 11.5% vol. The Grüner Veltliner was pressed extremely slowly over two days on a 100-ton tree press he designed himself. The pressing process itself is completely reductive, but after that the juice is given time to brown, meaning it is deliberately exposed to oxidation. The juice was fermented spontaneously and aged on the full lees for two years in a large Stockinger wooden barrel. It was filled unfiltered in November 2020 at a pH of 3.2. During fermentation, Lang added 3 to 5% destemmed grapes, which ferment intercellularly (as in carbonic maceration), thus continually restarting the fermentation process despite the constant 9°C in the cellar. Later, the wine was minimally sulfurized.

This is a self-contained, extremely fine Grüner Veltliner that takes some getting used to. While the “Fuchs und Dachs” is more expressive with younger oak, the “Dritte Akt” is initially a shy representative, which suits itself well when decanted and enjoyed from large glasses. Lanolin combines here with a very light note of lemon curd, cassis and crisp apple, with mirabelle plums and herbs.
Palate
On the palate, the Grüner Veltliner comes alive, almost challenging with its fine spice of ginger, turmeric and pepper. The wine possesses a certain sharpness, an acidity that is completely unusual for a Grüner Veltliner. When have you ever experienced a real acid bite with this variety and felt the sensation of sensing vibrant energy on the palate? This is the case, and it is complemented by a very distinctive chalky texture that is more reminiscent of limestone than slate. Overall, the wine possesses a clarity and brightness, coupled with depth and complexity, that one might associate with Chablis or Sancerre, where the taut structure is also familiar. However, there’s less fruit here and more herbal spice. The wine is highly exciting, with a saline finish, a long finish, and once again very elegant.
