Information

The Saint-Romain Sous Roche 2020 comes from the vineyard of the same name in the eastern part of the appellation. The Sous Roche vineyard faces east and lies at an altitude of 380 meters. The vineyard has limestone soil, known as Calcosol sur Marne de Saint-Romain, and is planted with 60-year-old vines. After hand-harvesting, partial destemming and spontaneous fermentation took place in stainless steel tanks, followed by a mixture of pigeage and remontage, i.e., punching down and overflowing of the pomace cap. Malolactic fermentation took place spontaneously in the barrels. Aging lasted for ten to twelve months in a mixture of 228-, 350-, and 500-liter barriques and tonneaux, of which no more than 10% are replaced annually. The wine was tasted daily, and the barrels were racked whenever Frédéric Buisson deemed it appropriate. It was fined with bentonite and filtered very coarsely. Sulfur was added only during bottling, with a maximum of 40 to 50 mg/l total sulfite.

Nose

The Saint-Romain Sous Roche 2021 combines plenty of dark fruit from black cherries, some plum and sour cherries with notes of bark, stems and stalks, some peat and tobacco, as well as pepper. The result is dark, almost earthy, but harmonious.

Palate

On the palate, the Sous Roche retains its earthy and acidic components, but these are balanced by a fine extract sweetness and a well-rounded, fine tannin. Despite all its clarity and freshness, the wine appears silky and elegant, but remains firm and grippy on the palate and pushes forward to a quite long, chalky finish.

The Buisson brothers’ finest red this year is the 2021 Saint-Romain Sous Roches, a medium to full-bodied, fleshy and supple wine evocative of plums, raspberries and rose petals. With attractive purity and depth of fruit, this represents a particular success in this more challenging year.
