Information

The Saint-Romain Sous le Château 2022 comes from the vineyard of the same name near the village. Sous le Château also faces southeast and lies at an altitude of 340 to 380 meters. Thirty-year-old Chardonnay vines grow in the vineyard, which is planted on limestone with so-called Colluviosol. The grapes are hand-picked, whole-bunch pressed, and fermented spontaneously in wood. Malolactic fermentation takes place spontaneously in the barrels. Aging takes place over ten to twelve months in a mix of 228-, 350-, and 500-liter barriques and tonneaux, of which no more than 10% are replaced annually. Concrete eggs and WineGlobes are also used. The wine is tasted daily, and the barrels are racked when Frédéric Buisson deems it appropriate. It is fined with bentonite and only very coarsely filtered. Sulfur is added only during bottling, with a maximum of 40 to 50 mg/l total sulfite. The winery is now Biodyvin-certified.

Colour

Intense straw yellow

Nose

The Saint-Romain Sous le Château 2022 is an aromatically bright and fresh Chardonnay, overshadowed by a smoky haze of flint and wood. There are also notes of lemons and tangerines with zest, yellow plums, and cape gooseberries.

Palate

On the palate, this is a Chardonnay with precision and clarity. It is an unadulterated wine with a cool intensity and an almost steely character, like some Chablis wines. There’s no hint of a warm, sometimes hot vintage here, even though there are a few more yellow fruits. Nevertheless, the taut acidity remains present right through to the finish.
