Info
2021 will go down in Gramona’s history as a very good year in terms of quality. A drought period did reduce the harvest somewhat, but the positives outweigh the negatives. The quality of the healthy grapes was simply incredible. Rainfall was historically low. This did not seem to have harmed the vines, as they were able to adapt to the changing climate over the years. The grapes are harvested by hand in 25kg crates. They are inspected on the sorting table and finally gravity-fed into the press. This is standard practice. The whole grapes are processed in the press. 50% is extracted. The cuvée is based on four grape varieties, each vinified separately: 55% Xarel-lo, 30% Macabeo, 10% Parellada, and 5% Chardonnay. The result is a second fermentation and at least 18 months of aging on the lees. The dosage according to a family recipe is the final step towards perfection. This bottling is only available in 0.375l. Disgorged in November 2023.
Colour
Silvery, shimmering straw yellow with light and pale green reflections, with a fine, high-pitched perlage. The mousse builds briefly.
Nose
Pure origin. This is also connected to the clear characteristics of the typical grape varieties: Xarel-lo, Macabeo, and Parellada, which dominate this cuvée. It reveals abundant maritime aromas. Oyster shell, sea spray, nori leaves, and wheatgrass are noticeably recognizable. From the ethereal corner, sage, mint, eucalyptus, thyme, and oregano contribute freshness combined with spice. It reveals Far Eastern influences through lemongrass, ginger, and coriander. On the nose, the fruit is still restrained. White peach, freshly sliced yellow apples, lemon juice, and bergamot zest are even more noticeable. It has a tart, robust character, which I attribute to almonds and the delicate influence of the yeast. Fresh and inviting.
Palate
The first sip underscores the impressions gained. The mousse builds very well on the palate, creating a melting sensation. The fruit suddenly seems noticeably more intense and ripe. I’d like to highlight the baked apple, candied pear, and quince compote. Fresh Nashi pear and the aforementioned citrus fruits also make their invigorating impressions. The carbonation then kicks in and breaks through the mousse, making it appear leaner and racy. With a delicate astringency, it provides plenty of stimulation to drink. Taut and lean with high elegance and intensity. A classic sparkling wine that doesn’t require a great deal of complexity. Its freshness and lightness also make it perfect as an aperitif.
