The year 2015 began with good rainfall, but this was not enough to bridge the summer drought. In July, the temperature climbed to 40°C, which significantly stressed the grapes and caused a standstill in the vines. From then on, precise work was required in the vineyard to ensure healthy grapes later on. The cuvée is based on 70% Xarel-lo and 30% Macabeo. The vines grow on the Font de Jui farm. The 22.5-hectare vineyard is planted on clay and limestone. Only these two vines grow there. The area stretches from the Anoia River at 100m above sea level to the hills of Mas Escorpi at 305m above sea level, above Spain’s sparkling wine capital, Sant Sadurni d’Anoia. III Lustros undergoes a different method than many other wines at Gramona. The resting period on the lees for this cuvée, for example, takes place under natural cork. The subsequent disgorgement is, of course, carried out by hand. The 100% compostable cellophane paper that lines the bottle is also applied by hand. The wine is allowed to age on the lees for 84 months and is marketed as a Brut Nature. Gramona is particularly famous for two things: its love of the Xarel·lo grape and its long lees aging periods. ‘III Lustros’ comes from the house’s most important single vineyard, “Finca Font de Jui,” which is planted with 70% Xarel·lo and 30% Macabeu on limestone-clay soils according to the chateau principle. This wine was first made this way in 1959, and since then it has set the standard for long-aged sparkling wines from Spain. The wine ages for 80 months in the bottle. All wines that mature for more than five years are stored under natural cork in the Gramona cellars. This means the wine is not hermetically sealed, but rather undergoes micro-oxidation, which, after a long aging period, gives the yeasts just the right amount of oxygen to develop their full aromatic potential. And this wine has plenty of it. It seems to change in the glass with every minute. It would be criminal to serve this wine in a flute rather than a white wine glass.

Nose
The slightly oxidative nose, combined with ripe apricot and lime zest, lends a complex freshness, while oriental herbs become noticeable. With a little oxygen, aromas of ripe banana peel, macadamia, and sandalwood emerge.
Palate
Present, yet fantastically integrated acidity carries the aromas that reflect the nose. Ripe apricots and pear impart a delicate fruitiness, while salty minerality combines with nutty, creamy nuances to create a smooth mouthfeel. With its fine perlage and oriental herbal notes, the III Lustros has an invigorating flow that fills the palate with every sip.
