Description

When François de Nicolay, who runs the Chandon de Briailles vineyard together with his sister Claude, was offered a large batch of excellent organically produced grape material in 2000, he could not resist. However, he also did not want to mix it with grapes from his own vineyards. Therefore, he founded the Négociant house François de Nicolay. Only wines whose grapes come from organic certification are offered under this label. Furthermore, the wines are produced as naturally as possible, i.e. without chaptalisation and with no or only the smallest amounts of sulphur. As with Chandon, the wines are filled directly from the barrel into the bottles by hand in the classic way. The grapes come from the Côte de Beaune and from Mercurey. Together with two partners, François de Nicolay also runs the Domaine des Moriers in Moulin-à-Vent.
