Parajes de Sotillo is a snapshot of the winery, the vintage, the region, and much more for the Callejo family. The wines are cultivated around Sotillo de la Ribera on loamy clay soils and sandy limestone. At lofty altitudes between 855 and 930 m, these barren soils produce wines full of freshness and coolness. The field blend from various plots is based on 85% Tinto Fino, 10% Garnacha, and 5% Albillo Mayor. Fermentation and aging vary depending on the grape variety and characteristics. The wines were aged for up to 19 months in concrete vats, foudres, and 500-liter barrels. The 2021 vintage was quite typical for the region: moderate temperatures and well-distributed rainfall. There is almost no rain in summer, so the vines must feed on the resources of winter and spring.

Colour

Intense cherry red with light violet reflections

Nose

The nose offers an intense aroma of blackberry and blueberry. The fruit seems to be wrapped in a cool, silky cloth. The berries present themselves with elegance and freshness. They never convey a hint of fruit intensity. Rosehip repeatedly represents a very restful fruit. Cassis and warm baked goods with corresponding fruits mingle with it: blackberry tart and lukewarm blueberry chutney with cinnamon. The balsamic side then counteracts this, delivering licorice and dark chocolate with ethereal overtones.

Palate

Juicy and powerful, it flows over the lips. The berries are generously portioned and have a wintry flavour. Cinnamon, cloves, and Christmas spices are noticeable. It remains true to its balance. The silky mouthfeel is supported by delicate tannins in the background, but this doesn’t detract from its elegance. Once again, licorice and chocolate emerge intensely. A wonderful moment.
