Product description for du Bouchot Pouilly-Fumé Terres Blanches AOC 2023
The 10-hectare winery in Pouilly-Fumé is the region’s first biodynamically certified estate. It has made another leap forward under Antoine Gouffier since he took over the business from his family in 2019. The Terres Blanches grows on weathered Saint-Doulchard marl with high levels of Exogyra Virgula oysters and thin layers of ferrous mica (glauconite). The wines undergo spontaneous fermentation in steel tanks; small amounts of SO₂ are added only before bottling.
Colour
Light yellow with a silvery rim.
Nose
The crystalline nose evokes maritime associations: salty sea breezes, oyster shells, and mineral freshness. Mild culinary herbs such as chervil, coriander, and borage, as well as cedar, citrus notes, and white pepper, add spice. Subtle fruit notes of grapefruit zest and yellow stone fruit complete the picture.
Palate
Liquid stone on the palate – sparse minerality meets cool fruit. A fine-grained grip reminiscent of chalky salt licks. Ripe acidity and cedary-citrus aromas of white pepper lend tension and elegance. A delicately spicy wine from an underrated region of the Loire.

The 2023 Terres Blanches is a saline, precise example of what a 2023 can do when picked before the heatwave and diluting rains had their way. Delicate liveliness from well-judged CO2 provides energy and brightness. It is light in body with good drive. Expect elderflower, boxwood and citrus flavors along with a salty finish.
